We celebrated the new year with a fantastic sparkling from Gaillac, a nice little town situated between Toulouse and Albi, in southwest France.
The Mauzac nature is, well, natural, organic, made by the same family for five generations, and a true work of love.
The specs: Vinified in 2 stages, 1st in stainless steel, then concrete with indigenous yeasts to let the fruit express itself.
The taste: Savory and cider like, with lovely notes of citrus and ripe apple, accompanied by fine, elegant bubbles and a lovely acidity on finish. This wine is unfiltered and cloudy in the glass, with a beautiful deep yellow robe.
